These quick and easy Chicken and Garlic Noodles are crazy delicious and come together in a cinch.

6 ounces noodles 16 ounces chicken breast, cut into bite-sized pieces 1 Tablespoon Avocado oil 1 red bell pepper, diced 2 zucchinis, spiralized 1 carrot, grated 2 tablespoons chopped fresh cilantro leaves FOR THE SAUCE ⅓ cup reduced sodium soy sauce 5 cloves, garlic, minced 2 Tablespoons brown sugar ½ Tablespoon Sambal oelek 1 Tablespoon oyster sauce ½ Tablespoon freshly grated ginger

In a small bowl, whisk together soy sauce, garlic, brown sugar, sambal oelek, oyster sauce, and ginger; set aside. In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Heat oil in a large skillet over medium high heat. Add chicken and 2 tablespoons sauce mixture, and cook, stirring occasionally, until cooked, about 4- 6 minutes; set aside. Stir in bell pepper, carrot to the skillet. Cook, stirring frequently, until tender, about 3-4 minutes. Add the zucchini zoodles Stir in cooked noodles, chicken and remaining soy sauce mixture until well combined (about 4 minutes. The inspiration for this dish comes from a popular Food Truck that would stop by our office complex. My co-worker enjoys the food trucks so we always made a point to meet up on Wednesdays to chow down on the delicious lunch items offered.

But, that was a few years ago. I missed those garlic noodles. For this dish, I reduced the amount of noodles and added zucchini noodles to bulk it up.

Holy shizzle, they were so delicious. And I couldn’t believe how quickly this dish came together.
