Ingredientes

  • 12 ounce pasta shapes
  • 1 Tbsp. extra virgin olive oil
  • 1 lrg onion, minced
  • 2 x garlic, crushed
  • 2 x chicken breast, (boneless) 6oz each, cut into cubes
  • 1 x 14 ounce passata
  • 4 x fresh tomatoes, minced
  • 3 Tbsp. black olives, pitted quartered
  • 1 tsp dry oregano
  • 2 Tbsp. fresh basil, minced
  • 1 x salt and pepper
  • 4 ounce blue cheese, (gorgonzola or possibly stilton, cubed

Direcciones

  1. Cook the pasta in boiling salted water till tender. Meanwhile, in a large saucepan, heat the oil and fry the onion and garlic till softened. Add in the chicken and continue to fry till just browned. Pour in the passata, tomatoes, olives, herbs and seasoning. Leave to simmer gently for 5 min or possibly till the chicken is cooked through. Drain the cooked pasta and mix with the chicken mix. Stir in half the cheese. Pour into an ovenproof dish and layer the remaining cheese on top. Place under a preheated grill for 10 min, till the cheese has melted. Serve immediately with a leafy green salad.
