Ingredientes

  • 1/2 lb Pork coarsely minced
  • 1/2 lb Boneless skinless chicken coarsely minced
  • 3 Tbsp. Peanut oil for chowing meats
  • 1 tsp Salt
  • 2 Tbsp. Peanut oil for chowing Large eggs
  • 3 x Large eggs beaten
  • 1 ounce Black tree-ear fungus see * Note
  • 1 Tbsp. Oyster sauce
  • 1 Tbsp. Sesame oil
  • 3 x Green onions minced
  • 1 x Iceberg lettuce head separate into leaves
  • 2 Tbsp. Light soy sauce
  • 1 x Egg white beaten
  • 1 Tbsp. Cornstarch
  • 1 Tbsp. Dry sherry or possibly Chinese rice wine
  • 1/2 tsp Freshly grated ginger

Direcciones

  1. Note: Can be found in Oriental markets. Soak in fresh water for 1 hour.
  2. Chop the meats and marinate ONLY THE PORK in the marinade mix for 15 min.
  3. Heat a wok and add in the oil and salt. Chow (stir-fry) the chicken first, just till barely done, and remove.
  4. Add in the pork along with the marinade and chow till done to taste. Remove.
  5. Heat the wok again and add in the oil for the Large eggs. Beat the Large eggs and chow over medium heat so they become scrambled but not dry. Chop them up in the wok with the wok paddle and remove to a plate.
  6. Add in the remaining ingredients except the lettuce to the wok and chow till the fungus is warm. Add in the pork, chicken and Large eggs to the mix and toss till all is warm. Remove to a serving bowl.
  7. Serve by wrapping a few Tbsp. of the meat mix in a lettuce leaf.
  8. This recipe serves 6 as part of a Chinese meal.
  9. Comments: If you have never had such a dish in lettuce leaves you are in for a treat.
