Receta Chicken and rice yum Pie
This is a pie with a difference...which is made in the microwave.Very easy and loved by kids and teenagers alike...its a super simple yummy dish for those cold winters or rainy nights.

- Wash rice well,drain and combine with salt and water in a microwave safe cooker and boil covered with kitchen towel for about 20 mins or until all the water is absorbed.Let it rest covered for 5 minutes
- Fluff up the rice
- Beat eggs and mix into rice with 1.5 cups cheese
- Press into greased bottom and sides of a deep microwavable pie dish
- In another bowl take chopped onion,stir in 2 tbsp oil and 4 tbsp water and cook on low for 2 minutes and add grated potato and cook for further 2 minutes
- In a separate bowl,add chicken tenders,a pinch of salt and just enough water to cover the chicken pieces and cook for about 12 minutes or till tenders are done cooking.
- Drain the chicken tenders and chop them a bit more smaller.
- Drain the onion and potato grates fully and layer them evenly all over the rice followed by the cooked and drained chicken tenders.Give it a gentle press.Sprinkle all over with left over 1.5 cups of cheese,sprinkle paprika and put it back in the microwave and cook covered loosely for 10 minutes.
- Garnish with parsley and serve warm.
