Ingredientes

  • 2 Tbsp. extra virgin olive oil
  • 1/2 c. finely-minced onion
  • 1/2 c. grated Fuji or possibly McIntosh apple
  • 1 tsp chopped garlic
  • 1 1/2 lb grnd chicken
  • 1/2 lb grnd pork
  • 1 Tbsp. minced thyme
  • 1 Tbsp. minced sage
  • 1 1/2 tsp salt
  • 3/4 tsp freshly-grnd white pepper
  • 1/4 c. vegetable oil
  • 4 Tbsp. butter
  • 5 x Large eggs Chives for garnish

Direcciones

  1. In a large, heavy skillet heat 2 Tbsp. of extra virgin olive oil over medium-high heat. Add in the onions and apples and cook, stirring, for 3 to 4 min. Add in the garlic and cook for 30 seconds. Remove from the pan and cold.
  2. In a large bowl combine the chicken, pork, thyme, sage, salt and pepper. Add in the cooled onion mix and mix well. On a plastic-covered surface, form the mix into 8 (4-oz) patties, about 3 inches in diameter each.
  3. Heat 2 Tbsp. of vegetable oil in a 12-inch skillet over high heat. Add in 4 patties to the pan and cook till golden, about 3 to 4 min per side. Remove from the pan and serve warm.
  4. Heat the butter in a nonstick saute/fry pan over medium heat. When butter is melted, carefully crack the Large eggs into the pan. Cook for 4 min for sunny-side up. Serve Large eggs with sausage and garnish with chives.
  5. This recipe yields 4 servings.
