Tastes so good you won’t believe it’s healthy!

If you love chicken salad and avocados, then you are going to go bonkers for this recipe. After my first bite , I had an OMG moment. How can this taste so great and be healthy? By using vanilla Greek yogurt, but you can use reduced-fat mayonnaise.

This great served on a bed of lettuce, with toasted rolls, whole grain pita, or make it into a wrap using tortillas for grab-and-go lunch.

Direcciones

  1. In a small bowl, toss avocado with 1 tablespoon lemon juice; set aside.
  2. In a large bowl, combine the chicken, grapes, apple, celery, yogurt, walnuts, ginger and remaining lemon juice.
  3. Stir in avocado. Serve on lettuce-lined plates if desired.
  4. Tip: You can easily replace the grapes with raisins or dried cranberries.
