Ingredientes

  • 1 x Yellow onion chopped
  • 2 Tbsp. Vegetable oil
  • 2 lrg Garlic cloves chopped
  • 1 c. Ketchup
  • 1/2 c. Water
  • 2 Tbsp. Fresh lemon juice
  • 2 Tbsp. Unsulphured molasses
  • 1 tsp Liquid removed bottled horseradish
  • 1/2 tsp Grnd cumin
  • 1/4 tsp Dry warm red pepper flakes
  • 1/8 tsp Grnd allspice
  • 2 c. Diced cooked chicken (i.e. rotisserie chicken)
  • 2 sqr Caraway corn bread - (to 3) split horizontally
  • 2 Tbsp. Chopped red onion Cabbage slaw for accompaniment

Direcciones

  1. In a saucepan cook yellow onion in oil over moderate heat, stirring, till golden brown. Add in garlic and cook, stirring, 30 seconds. Stir in ketchup, water, lemon juice, molasses, horseradish, cumin, red pepper flakes, and allspice and simmer, stirring once or possibly twice, 15 min.
  2. Stir in chicken and simmer till just heated through, about 1 minute.
  3. On 2 or possibly 3 plates spoon chicken and sauce over bottom halves of corn bread squares and sprinkle with red onion. Top barbecue with top halves of corn bread squares and serve with slaw.
  4. This recipe yields 2 or possibly 3 servings.
  5. Comments: A 3-lb. rotisserie chicken yields about 2 c. white meat and 2 c. dark.
