Chicken Breast with Crab Stuffing

Ingredientes

  • 4 split chicken breasts, boned, skin on
  • 1/2 tsp salt
  • 1 tsp white pepper
  • 1 tsp paprika
  • For stuffing:
  • 4 slices white bread
  • 1/2 C half and half
  • 1 1/2 C frozen cooked crab, thawed, shredded and drained
  • 1/4 C melted butter
  • 1/8 tsp cayenne pepper
  • 1/4 tsp salt
  • 1 T parsley
  • 1/4 tsp poultry seasoning
  • 1/8 tsp thyme
  • For sherry mushroom sauce:
  • 1/4 C melted butter
  • 1/4 C cooking sherry
  • 1/2 lb fresh mushrooms, sliced
  • 1/2 tsp garlic salt

Direcciones

  1. Prepare stuffing:
  2. Toss bread with the half and half
  3. Add other ingredients and stir until combined
  4. Set aside
  5. Rub chicken with butter.
  6. Place in pan, skin up
  7. Bake at 350F, uncovered, for 25 minutes
  8. Sprinkle salt, white pepper, and paprika on chicken.
  9. Prepare Sherry Mushroom Sauce:
  10. Saute mushrooms in butter. Add other ingredients and remove mushrooms.
  11. Add sherry sauce to chicken after removing mushrooms.
  12. Bake chicken and sherry sauce 10 minutes
  13. Turn chicken breasts over
  14. Drain the liquid and save
  15. Fill each chicken cavity with stuffing, mound and press
  16. Spoon on mushrooms and drained liquid
  17. Bake 30 minutes
  18. Baste chicken 1-2 times during final baking
  19. may brown under broiler if desired
