Chicken Breasts In Parmesan Cream

Ingredientes

  • 4 x Half chicken breasts Salt & pepper
  • 2 Tbsp. Butter
  • 2 Tbsp. Flour
  • 3/4 c. Heated heavy cream
  • 1/2 c. Grated Parmesan
  • 3 x Egg yolks
  • 1/2 c. Bread crumbs

Direcciones

  1. Preheat oven to 350. Bone & skin chicken & sprinkle with salt & pepper. Heat butter in fry pan & when it starts to create add in the meat.
  2. Roll them in butter & cook 3 min on each side over med heat (the butter should not burn). Remove from pan & place in greased baking pan. Add in flour to fry pan & cook several min, then add in cream & stir till you have a smooth thickened sauce. Stir in 1 Tbls. cheese, beat yolks with a little of the warm sauce, then stir them in as well.
  3. Coat chicken with this sauce, sprinkle with remaining cheese mixed with crumbs & place in oven. Bake 10 min or possibly till chicken is done & sauce is set & slightly puffed. If you wish, these can be placed under broiler for 1 minute or possibly so to brown lightly.
