Receta Chicken Breasts with Balsamic Cabbage; sick bunnies
This is based on a recipe that I can’t find and only have a vague memory of.
I used to make a chicken and cabbage skillet dinner when we lived in the US. I remember that it was pink and that we loved it. The recipe was from Bon Appétit magazine.
And then we moved.
When I looked for the recipe I couldn’t find it.
I’ve tried off and on over the years to recreate it but have never been successful.
I’ve tried often enough that my taste buds are now confused as to what I’m actually trying to do.
On the other hand, this was really good.
I’m going to quit trying now.
Chicken Breasts with Balsamic Cabbage
Total time: 35 minutes
Ingredients:
- 2 chicken breasts, boneless, skinless, cut into thirds
- 1 onion, chopped
- 2 cups roughly chopped Savoy cabbage
- 1/4 cup (2oz, 60ml) chicken stock
- 1/4 cup (2oz, 60ml) Balsamic vinegar
- 1 tbs crushed sage leaves
- 1/2 tsp rosemary
- 1/2 tsp marjoram
- 1 tbs tomato paste
- 2 tsp brown sugar
- 2 tsp olive oil
Instructions:
Heat oil in large nonstick skillet. Add onion and chicken breasts.
Sauté until onion is tender and chicken is golden, about 10 minutes, turning the chicken once.
Remove chicken breasts. Add cabbage to skillet and stir-fry until wilted, about 5 minutes.
Add herbs, tomato paste, chicken stock, vinegar, sugar and stir to combine.
Lay the chicken breasts on the cabbage, cover and bring to a boil.
Reduce heat and simmer for 20 minutes, until cabbage is tender.
Stir cabbage and turn chicken once.
When done, spoon onto a platter and serve.
Our The bunnies are sick.
Bizarre as it seems, I have no problem with my neighbor shooting the bunnies, but knowing that they’re sick makes me very sad. For some reason, I want to help them….
I won’t, but my softer side would like to.
Today when we were out for our walk, Bonnie (of course it was Bonnie….) ran up to the woodpile and started sniffing something. But she didn’t seem terribly interested.
I called and she came right to me.
I tossed out some kibble for them to chase and went to check out whatever she had been checking out.
It was a bunny.
A live bunny, but obviously a sick bunny. I walked up to it and it didn’t move.
I’m guessing it has myxomatosis….. It’s a fatal disease caused by a virus and transmitted by fleas.
Dogs don’t get it…. even when they, er, chew on dead bunny heads.
We found a dead rabbit a few weeks ago, with no apparent cause of death. Our neighbor found one a few days later. And then, of course, there was the one Bonnie found last week (she didn’t kill it, just found it).
Plus, I’ve noticed that the bunnies seem lethargic. We see them during our morning walks and they barely move out of the way. They use to run when we got within 15 feet. Now I have to yell and stamp my feet to get them to move.
On the one hand, they have gotten rather numerous, and this could / will wipe out the population.
On the other hand, I hate to see sick, suffering bunnies.
Most importantly, I really don’t want to see dozens of dead bunny bodies all around our house and gardens.
It could be a long spring…..
When I checked a little while ago the bunny by the woodpile was still there. It had move a bit closer to the wood, maybe seeking shelter. I expect we’ll find a dead bunny in the morning.
It could be a very unsettling spring….
