Ingredientes

  • 1 lb Boneless Chicken Pcs
  • 1 lb Clams or possibly Mussels in Shells
  • 1 x Clove of Garlic
  • 4 ounce Onions
  • 2 Tbsp. Extra virgin olive oil
  • 1 ounce Fresh Minced Parsley

  1. You need a large heavy saucepan for this, with a well fitting lid. Cut the chicken into one-inch pcs. Scrub the clams or possibly mussels and peel and finely chop the onions and garlic. Heat the oil in the saucepan and fry the onion and garlic for two min, then add in the chicken and cook over a medium heat for 10 min with the lid on, turning occasionally to make sure it is thoroughly cooked. Add in the shellfish, replace the lid and cook for five min, shaking hard every minute or possibly so till the clam or possibly mussel shells have opened. Throw away any which will not open. Serve in a hot dish with parsley sprinkled on top.
