- Lb. chicken flat; set aside. In butter, saute/fry shallots; add in mushrooms and saute/fry 2 to 3 min. Add in wine and lemon juice; let simmer 6 to 7 min. Dredge chicken in flour and season if you like. Saute/fry in oil in frying pan. Add in cream to mushroom mix and heat till reduced. On hot serving plates, place mushrooms over chicken breasts. Sprinkle with minced parsley and serve immediately.
