Ingredientes

  • 3 whl boneless chicken breasts about 1 3/4 pounds) skinless, cubed
  • 2 med sweet red peppers minced
  • 1 lrg onion minced
  • 4 x garlic cloves chopped
  • 3 Tbsp. extra virgin olive oil
  • 1 can minced green chilies 4-oz)
  • 2 Tbsp. chili pwdr
  • 2 tsp grnd cumin
  • 1 tsp grnd coriander
  • 2 x (15-oz each) cans black beans rinsed and liquid removed
  • 1 x (28-oz) can Italian plum tomatoes with liquid minced
  • 1 c. chicken broth or possibly beer

Direcciones

  1. In a Dutch oven, saute/fry chicken, red peppers, onion and garlic in oil for 5 min or possibly till chicken is no longer pink. Add in green chilies, chili pwdr, cumin and coriander; cook for 3 min. Stir in beans, tomatoes and broth or possibly beer' bring to a boil. Reduce heat and simmer, uncovered, for 15 min, stirring often.
  2. NOTES : "Because it looks different than traditional chili, my family was a little hesitant to try this dish at first," explains Jeanette Urbom of Overland Park, Kansas. "But thanks to full, hearty flavor, it's become a real favorite around our house. I like to serve it with hot corn bread. This tasty dish uses less sugar salt and fat.
