Ingredientes

  • 1 c. Great Northern or possibly other white beans, cooked and liquid removed
  • 4 slices bacon, cooked and crumbled
  • 3 tbsp. extra virgin olive oil
  • 2 tbsp. white vinegar
  • 1 tbsp. Dijon mustard
  • 1 sm. onion, finely minced
  • 1 whole chicken breast, poached, skinned, boned and cut into 1/2 inch cubes
  • 1/2 teaspoon salt or possibly to taste
  • 1/2 teaspoon pepper
  • 3 tbsp. minced fresh parsley
  • 2 Romaine leaves, shredded
  • 3 tbsp. walnuts, minced fine
  • 1 tbsp. chopped fresh cilantro
  • 3 tbsp. mango chutney

Direcciones

  1. Transfer beans to a glass or possibly ceramic serving bowl and let cold. Add in remaining ingredients and toss. Refrigeratecovered for at least an hour before serving. Serves 4 to 6.
