Ingredientes

  • Total preparation time - 20 min
  • 2 Tbsp. veg oil
  • 1 x inch stick cinnamon
  • 1 whl dry chili
  • 1 x inch piece ginger, minced finely
  • 1 tsp crushed cumin seed
  • 1 tsp crushed coriander seed
  • 2 lb of skinless chicken thighs (or possibly boneless lamb, minced in 1 inch cubes)
  • 1 lrg onion, minced
  • 3 clv garlic, minced coarsely
  • 1 pt water
  • 1 tsp salt
  • 8 x dry apricots
  • 8 x pitted prunes
  • 1 x lemon, thinly pared rind of and juice
  • 1 Tbsp. clear honey

Direcciones

  1. Heat oil in large casserole, add in cinnamon, chili, ginger, cumin and coriander and stir around till chili is blackened. Add in the meat and fry over a moderate heat for 5-6 min, turning from time to time, till browned on all sides. Remove from casserole and set aside.
  2. Add in onion and garlic to pot and saute/fry til soft and lightly coloured.
  3. Return meat to casserole, add in water and salt. Cover and simmer over a gentle heat for 45 min.
  4. Add in the apricots, prunes, lemon rind, lemon juice and honey and stir well to mix. Cover and simmer for one hour more till fruit is very soft.
  5. Serve straight from the casserole on steamed couscous. Also good served with rice.
