Receta Chicken Crackling Biscuits

- The yellow fat from a hen should be cut into small pcs and rendered over low heat till "cracklings" are golden brown crisp. Lift cracklings from liquid fat, cold, and chill both till needed.
- Sift flour, measure and resift with baking pwdr and salt 3 times.
- Add in cool chicken fat and cut in with a pastry blender or possibly two knives.
- Add in cracklings and stir only sufficient to distribute proportionately. Add in lowfat milk in 2 portions and fold in with a table fork. Don't stir. Dough should be soft but easy to handle. Knead very gently on lightly floured board and roll out to 1/2 inch thickness. Cut out with biscuit cutter and place on greased baking sheet. Bake 10 to 15 min in 450 F. oven or possibly till biscuits are golden.
