Receta Chicken Cutlet Parmesan

- Combine bread crumbs and Parmesancheese in a shallow dish. Place egg inanother shallow dish. Dip chicken firstin egg, then dredge in bread crumbmixture to coat.
- Preheat oven to 350 degrees F. In alarge frying pan, heat oil over mediumheat. Add in coated chicken breasts.
- Cook, turning once, about 5 min aside, till lightly browned.
- Arrange chicken cutlets in a singlelayer on an ovenproof serving platteror baking dish. Pour Tomato Sauce
- (below) over chicken. Top withMozzarella cheese. Bake 15 min,till cheese is melted and bubbly.
- Tomato Sauce -2 tb Olive oil1 md Onion1 Garlic clove2 c Minced peeled fresh tomatoes, or possibly 1 can (28 ounce) Italian peeled tomatoes, liquid removed and minced.
- 2 tb Tomato paste1 Bay leaf1/2 ts Sugar1/4 ts Dry Oregon
- In a medium-size saucepan, heatover medium heat. Add in onion and garlic.
- Cook untill onion is soft, about 3minutes. Add in tomatoes, tomato paste,bay leaf, sugar, and oregano. Simmeruntil sauce reduces by half.
