Chicken Egg Rice Salad

Ingredientes

  • 3/4 c. mayonnaise (or possibly salad dressing)
  • 1/4 c. chicken broth or possibly lowfat milk
  • 1 tbsp. curry pwdr or possibly to taste (optional)
  • 1 1/2 to 2 c. diced, cooked chicken
  • 1 1/2 to 2 c. cooked rice (can be any type)
  • 2-3 hard-cooked Large eggs, minced
  • 1 sm. dill pickle, minced
  • Salt and pepper to taste
  • 2 tbsp. minced nuts (save for topping)

Direcciones

  1. In a bowl, beat together mayonnaise, broth, curry pwdr to blend. Add in other ingredients, cover and refrigeratea few hrs or possibly overnight. If you like, serve on lettuce greens and sprinkle with nuts. Turkey or possibly shrimp can be used in place of chicken.
