10 ounces boneless skinless chicken breasts 2 tablespoons Chicken base ½ Tablespoon Onion Powder ½ teaspoon Ground Cumin ½ teaspoon Chipotle Powder 1 clove garlic, minced ¼ teaspoon Cayenne Pepper ⅛ cup Masa Harina 1 quart water, divided ½ cup Dei Fratelli Veggie Juice 4 oz. Monterey Jack cheese (shredded)
In a small bowl, combine the chicken base, cumin, chipotle, cayenne, and garlic. In a high-speed blender shred the chicken. Set aside. In large pot, heat over medium heat. Add the chicken base 2 cups water, the onion powder, cumin, chipotle, cayene and garlic. Saute 5 minutes. In another bowl, combine masa harina with 2 cups of water. Stir until all lumps dissolve. Add to the chicken base; bring to boil. Once mixture starts to bubble, continue cooking 2 to 3 minutes, stirring constantly. Add veggie juice and chicken and let mixture return to boil, stirring occasionally. After soup boils for about 5 minutes, reduce heat to medium and add the cheese. Cook, stirring occasionally, until cheese melts. 3.2.2807

Rich and delicious. So much like the popular soup at Chili’s Restaurant. I remember making this copycat recipe years ago, but I used enchilada sauce. I changed up the recipe by using Dei Fratelli’s Veggie Juice instead of the enchilada sauce.
Make sure you get the first bowl because if you wait too long the troops won’t leave any for you.

Oh, those are home made tortilla strips made with low carb. whole wheat tortillas, sprinkled with sea salt and lime juice and baked in the oven until nice and crisp.
