Receta Chicken Enchiladas in Sour Cream Sauce

I was at a restaurant in Dallas, TX and they had this most wonderful sour cream sauce for their chicken enchiladas. I started playing around to recreate the sauce and came very close. Below is my recipe. Enjoy!

For the Enchilada

4 boneless skinless chicken breasts

1 pkg. of La Tortilla Factory tortillas

1 large can enchilada sauce

Salt and Pepper to taste

1 small onion diced

1 16 oz bag of shredded four cheeses

Olive Oil

For the Sauce

1 can cream of chicken soup

1 16 oz light sour cream

1 jar sliced jalapenos

For the Garnish

1 diced tomato
-
1 8 oz bag of shredded four cheeses

chopped jalepenos to taste
