Ingredientes

  • 4-6 boneless chicken breasts
  • 1 egg
  • Flour
  • Head of escarole
  • Garlic, crushed
  • 1 c. dry white wine
  • 1 c. chicken broth
  • 1-2 c. Mozzarella cheese
  • Parmesan cheese
  • Extra virgin olive oil

Direcciones

  1. Lb. out the chicken breasts; dip in egg and flour. Saute/fry in extra virgin olive oil. Set chicken breast aside. Saute/fry crushed garlic and minced escarole till wilted. Add in chicken broth and wine. Place chicken breasts in baking pan and pour sauce over. Shred Mozzarella and sprinkle over chicken. Top it with Parmesan. Cover with foil and bake at 350 degrees for 45 min. Serve with rice or possibly pasta.
