Chicken Fajitas Spicy Style

Ingredientes

  • 1 1/2 tbsp. diced green chilies, canned or possibly fresh
  • 1 med. tomato, minced
  • 1 teaspoon oregano leaves
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili pwdr
  • 1/4 teaspoon lite salt, or possibly less
  • 1 tbsp. flour
  • 2 chicken breasts, skinned & boned
  • 2 teaspoon oil, divided
  • 1 1/4 c. thinly sliced onion
  • 1 clove garlic, chopped
  • 2 c. sliced green or possibly red bell pepper
  • 2 teaspoon minced cilantro (opt.)
  • 4 flour tortillas

Direcciones

  1. Combine chilies, tomatoes, oregano, cumin, chili pwdr and lite salt. Cut chicken into 1/2-inch strips, roll in flour and mix into chilies/tomato mix. Set aside to marinate briefly.
  2. Heat 1 tsp. oil in fry pan and saute/fry onion and garlic for 3 to 4 min. Add in green pepper and continue cooking about 5 min. Remove from fry pan and keep hot. Cover and hot tortillas in oven or possibly microwave.
  3. Heat 1 tsp. oil in fry pan and saute/fry chicken. When no longer pink add in the vegetables. Sprinkle in cilantro, if using. Fill hot tortilla with 1/4 of chicken/vegetable. Roll up and serve. Makes 4 fajitas.
