Ingredientes

  • 1 x 3 lb chicken, cut up in 8, breast, legs and wings
  • 1 lrg Onion, minced
  • 1/2 x Bell pepper
  • 1 can Tomatoes, or possibly
  • 5 x Tomatoes, pelled and seeded
  • 2 x Cloves garlic, chopped
  • 2 Tbsp. Balsamic vinegar
  • 1 c. Dry white wine
  • 1/2 c. Pitted green olives Salt and pepper, to taste
  • 2 Tbsp. Extra virgin olive oil
  • 1/4 lb Mushrooms, sliced

Direcciones

  1. Season chicken with salt and pepper. Brown pcs in extra virgin olive oil, transferring them to a plate as they brown. Add in onions to the pan and cook till soft. Add in garlic and mushrooms. Add in vinegar cook till it evaporates.
  2. Add in wine and cook till almost evaporated. Add in minced green pepper and tomato to the onions amd simmer covered till it becomes a paste. Return chicken pcs to the pan .Bring to a boil. Cover pan and simmer 45 min or possibly untilchicken is cooked through. Let cold. Remove meat from bones and cut into bite size pcs. Return chicken to sauce. Add in olives, bring to a boil.
  3. Refrigeratebefore using.
