These Chicken Fries are the perfect combination of spicy, crispy and coated in a pork rind crust. You’ll be amazed that these are low in carbs!

16 ounces boneless skinless chicken breasts (thin filets) sliced to look like fries ⅓ cup butter milk ½ Tablespoon Hot Sauce 2 Tablespoons Yogurt Ranch Dressing ¼ teas[ppm fresh ground pepper 2.5 ounces Rudolph's Original Pork Rinds (crushed) .5 ounce Rudolph's Bold & Spicy Pork Rinds (crushed) Cooking Oil
Rinse the chicken and pat dry before you cut them into 'fries" Add the buttermilk, hot sauce and ranch dressing to a zip lock back. Soak chicken strips in mixture at least 2 hours. Pour oil into pan until it has about an inch depth and heat on medium heat. Place the pork rinds in a shallow bowl. Remove the chicken strips and season with the pepper. With the remaining marinade dip the chicken strip back into the marinade then into the crushed pork rinds. Once the oil is heated (around 350 F, use a thermometer if you can), slowly drop the chicken strips inside. Be careful not to overcrowd the pan After 2-3 minutes, flip onto the other side. After cooking, carefully remove and cool on a wire rack. You want all the excess oil to be extracted from the chicken. Let cool for 5 minutes and enjoy! You can even participate in Homegating, otherwise known as watching the game in the comfort of your own home! The season is upon us. Let’s not forget that baseball season isn’t even over yet.
That being said, these Chicken Fries are the perfect finger food to serve while watching all that football.
