Ingredientes

  • 8 x skinless boneless chicken breast halves
  • 3 Tbsp. extra virgin olive oil -- divided
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tsp dry cilantro
  • 2 clv garlic -- finely chopped
  • 24 x black olives -- sliced
  • 1/2 c. diced onion
  • 4 x pepperoncini peppers diced
  • 1 c. diced tomatoes
  • 8 ounce feta cheese -- crumbled
  • 1/2 lb herb stuffing mix
  • 2 x Large eggs -- beaten

Direcciones

  1. Place chicken between 2 sheets of plastic wrap and flatten to 1/4-inch thickness. Brush with 2 Tbsp. of the extra virgin olive oil and sprinkle with salt, pepper, and cilantro.
  2. In small saucepan, place remaining 1 Tbsp. extra virgin olive oil over medium heat. Add in garlic, olives, onion, and peppers; saute/fry just till tender, about 2 min.
  3. Divide mix into 8 equal parts and spread in center of each chicken piece. Top each with 2 Tbsp. diced tomatoes and 1/8 of feta cheese.
  4. Fold chicken around the mix; secure with picks.
  5. Place stuffing in shallow pan and in another dish, place Large eggs. Dip each chicken roll first in egg, then in stuffing.
  6. Line baking pan with foil and arrange chicken in single layer. Bake in 350 degrees oven about 30 min or possibly till fork can be inserted in chicken with ease.
