Chicken in Green Olive Sauce

Chicken is simmered in a salty wine-laced buttery sauce. There's a luscious tang to this dish that soaks into a bed of yellow rice. An easy meal good enough for company. A rectory cook, Anna, brought this home from Italy.

Ingredientes

  • 4 Chicken breasts, boneless, skinless, cubed
  • 8 large Italian green olives (purchase at your local supermarket olive bar) chopped
  • 1 small jar of capers
  • 1 can (14 1/2 oz) chicken broth
  • 1 cup white wine
  • 3-4 Tablespoons butter
  • 2 Tablespoon olive oil
  • 2 garlic cloves minced
  • 1 Tablespoon chives
  • 1 cup flour

Direcciones

  1. Dredge cubed chicken in flour. Shake off excess
  2. Melt butter and olive oil in skillet
  3. Brown floured chicken in butter/oil until almost cooked through and golden in color
  4. Add garlic and chives. Saute 2 minutes on low
  5. Add wine
  6. Simmer & Stir
  7. Add olives and 1/2 jar of capers
  8. Cook 10 minutes
  9. Add 3/4 can of broth
  10. Stir
  11. Cook 5 more minutes
  12. can add more broth if you desire more liquid
