Ingredientes

  • 3 1/2 lb broiler-fryer chicken salt and pepper
  • 1 tsp butter
  • 2 x carrots slice diag.
  • 2 x parsnips cut in strips
  • 2 stalk celery 1" pcs
  • 3 x green onions sliced
  • 2 x cloves garlic chopped
  • 2 tsp fresh oregano
  • 2 c. chicken broth
  • 1 c. dry white wine

Direcciones

  1. Wash chicken and giblets and pat dry. Season with salt and pepper and saute/fry in butter. Transfer to crock pot. Rinse out drippings with water and pour into crock pot.
  2. Place carrots, parsnips, celery and leek around chicken. Season vegetables with salt and pepper. Add in garlic, oregano, broth and wine. Cover pot. Cook on low for 8 hrs or possibly till tender.
  3. Remove chicken and vegetables to a platter and keep hot. Pour pan juices into saucepan. Skim fat. Boil down till reduced to 1 c..
