Chicken Meatballs with Peanut Sauce – tender chicken meatballs flavored with cilantro and garlic topped with a peanut sauce and chopped peanuts. Great as an appetizer or main course. I love meatballs!  Doesn’t really matter what kind of meat it is, I just love meatballs.  Coconut Curry Meatballs are so good with the curry sauce. Unfortunately my husband doesn’t share my passion for balls of meat.  I could have Sheet Pan Greek Meatballs pretty much every week and not get sick of them. Not really sure why, what is not to love? I sneak them in sometimes, trying different versions hoping to find one that does it for him.  Like Leftover Turkey and Stuffing Meatballs, he doesn’t complain when I make those every year after Thanksgiving.  Probably because they have enough going on, and don’t dry out. I think that is his biggest fear with meatballs. Well these chicken meatballs with peanut sauce he lets me make over and over again. It has all kinds of flavors, they stay super tender and moist, plus that dipping sauce! He loves peanut sauce.  Asian Peanut Noodles are one of his favorites. So I was hoping these chicken meatballs would remind him of that. And it worked! If you like things spicy, you could add some heat to the dipping sauce. My husband just likes to have a little Sriracha over the side to drizzle over his. Serve with Roasted Green Beans with Sesame and Garlic for an Asian style meal.  Or serve over rice, there is plenty of extra peanut sauce to make it a full meal. The meatballs are even great the next day for lunch. I like to reheat the dipping sauce, and it makes for a great lunch. So add these chicken meatballs with peanut sauce to your menu today. Course: Appetizer, Main Course Cuisine: American Servings: 4 Ingredients 1 pound ground chicken 1/4 cup cilantro chopped 1/4 cup dried breadcrumbs 1/4 cup onion grated 2 clove garlic minced 1 tsp salt 1/2 tsp black pepper 2 Tbls canola oil 1/4 cup creamy peanut butter 2 Tbls soy sauce 3 Tbls sugar 2 Tbls sesame oil peanuts for garnish Instructions Mix chicken, cilantro, breadcrumbs, onion, garlic, salt and pepper. Roll into about 1 inch balls.  Heat the oil in a skillet over medium heat. Cook the meatballs until they are cooked through, about 10 minutes. While they are cooking, you can make the sauce. Mix the remaining ingredients together in a small bowl. Microwave for few seconds to get it warm. Stir together. Toss the meatballs with half of the sauce, reserving the other ½ for dipping. Sprinkle with the chopped peanuts.
