Ingredientes

  • 1 green pepper, cut into julienne strips
  • 1 red pepper, cut into julienne strips
  • 1/2 c. minced onion
  • 1/4 c. veg. oil
  • 2 (8 ounce.) chicken breasts, boned, skinned, cut into 1/2 inch strips
  • 12 ounce. raw shrimp, cleaned
  • 2 garlic cloves, chopped
  • 1/2 teaspoon chili pwdr
  • 1/4 teaspoon grnd cumin
  • 1/4 teaspoon thyme
  • 1/4 teaspoon allspice
  • 1/8 teaspoon Tabasco sauce
  • 1/2 c. brown sauce (see note)
  • 1 tomato, cut into julienne strips
  • 2 tbsp. chili sauce
  • Saffron rice ring
  • Okra, optional

Direcciones

  1. Saute/fry red and green pepper and onion quickly in warm oil to maintain hard texture; remove from skillet with a slotted spoon and keep hot. Saute/fry chicken; remove from skillet. Saute/fry shrimp; remove from skillet.
  2. Saute/fry garlic and spices; add in brown sauce, tomato and chili sauce. Add in sauteed vegetables and shrimp. Spoon into saffron rice ring. Garnish with sauteed okra.
