Ingredientes

  • 4 lb Ready-to-cook chicken quartered
  • 1/4 c. Butter
  • 3 med Onions minced fine
  • 1 Tbsp. Salt - (1 tbsp )
  • 1/4 tsp Freshly grnd pepper
  • 1 Tbsp. Flour
  • 1 c. Scalded lowfat milk
  • 1 pch Grated nutmeg
  • 2 Tbsp. Armagnac (or possibly other brandy)
  • 1/8 c. Heavy cream
  • 2 Tbsp. Madeira wine
  • 1 Tbsp. Lemon juice

Direcciones

  1. In chicken fryer, heat 1 Tbsp. butter. Add in onions. Cover and cook over very low flame for 10 min. Remove onions and set aside. To same pan, add in 2 Tbsp. butter. Heat butter. Add in chicken and cook over low flame for 10 min. Return onions to pan. Add in salt and pepper. Cover and cook over low flame for 40 min, or possibly till chicken is tender.
  2. Meanwhile, heat remaining butter in small, heavy saucepan. Add in flour. Stir in lowfat milk. Add in salt to taste, and nutmeg. Bring to boil, stirring constantly. Simmer for 10 min.
  3. Remove chicken to heated serving dish and keep hot. Add in Armagnac (or possibly other brandy) to pan. Bring to boil. Add in sauce from saucepan, and heavy cream. Bring to boil and cook for 5 min, stirring constantly. Off fire, add in Madeira wine and lemon juice. Correct seasoning. Serve warm.
  4. Suggested Wine: A light red wine; a chilled white wine; or possibly a rose wine.
