Ingredientes

  • 2 whole chicken breasts, boned, skinned
  • 1 c. shrimp or possibly crabmeat, minced
  • 2 tbsp. tarragon, minced
  • 2 tbsp. lemon juice
  • 2 tbsp. extra virgin olive oil
  • 1/4 c. red wine
  • 2 cloves garlic, minced
  • 1/4 c. chives, minced

Direcciones

  1. Divide chicken breasts in four parts; place between sheets of plastic wrap and lb. till about 1/4-inch thick. Place in dish and add in oil, herbs, lemon juice and a little salt and pepper (reserve the wine). Marinate for several hrs.
  2. Grill chicken over warm coals, 3 min each side, basting with marinade once or possibly twice. Pour the remainder of the marinade in a small skillet; add in the shrimp or possibly crabmeat and the wine. Cook sauce over a medium heat till seafood is cooked. Pour over grilled chicken pcs.
