Ingredientes

  • 1 lb grnd chicken
  • 1 x egg beaten
  • 1/4 c. matzo meal
  • 2 tsp coarsely-minced parsley
  • 1/2 c. tomato sauce
  • 1/2 tsp salt Freshly-grnd black pepper to taste
  • 1/2 c. flour
  • 1 x egg beaten with
  • 1 tsp oil and with
  • 1 tsp water Oil for frying
  • 1 c. chicken broth
  • 1 can tomato sauce - (14 1/2 ounce)
  • 1/2 c. water
  • 1/2 tsp salt Juice of 1 lemon
  • 3 x garlic cloves crushed
  • 1 dsh sugar
  • 1 x chopped onion (optional)

Direcciones

  1. For the Patties: Mix the chicken, egg, matzo meal, parsley, tomato sauce, salt and pepper to taste. The mix will be very moist. Shape it into 12 patties using wet hands. Coat each patty with some of the flour, then dip in the beaten egg mix.
  2. Heat 1/2 inch of oil in a large skillet over medium-high heat. Fry the patties in 2 batches till both sides are golden, about 2 min a side. Drain on paper towels.
  3. For the Sauce: Combine the broth, tomato sauce, water, salt, lemon juice, garlic, sugar and onion, if using, in a saucepan over medium-low heat. Cook till slightly thickened, 30 min.
  4. Heat the oven to 350 degrees. Spread half the sauce in the bottom of a 2 1/2-qt casserole. Arrange the fried patties in a single layer on top, then top with the remaining sauce. Bake for 40 min.
  5. This recipe yields 6 servings.
