Chicken Quesadillas

Ingredientes

  • 8 - 10 inch flour tortillas
  • 1 lb. cooked chicken, chopped
  • 1 cup shredded Monterey Jack cheese
  • 1-2 jalapeno peppers, seeded and minced
  • 1/4 cup chopped onions
  • 1 chopped tomato
  • 4 TBSP minced cilantro
  • 1/4 tsp salt
  • 1/2 tsp black pepper

Direcciones

  1. Preheat oven to 500F
  2. In a large bowl, stir together the chicken, cheese, jalapenos, onion, tomato, cilantro, salt and pepper.
  3. Arrange 1/8 of the filling on each tortilla, covering half of it.
  4. Fold the tortilla over the filling; press down
  5. Place quesadillas, not touching, on shallow baking sheets.
  6. Bake until tortillas are crisp and golden, about 5 minutes.
  7. Transfer to a large cutting board and cut into wedges.
  8. Serve with salsa.
