Ingredientes

  • MARY SUE DAY
  • 2 1/2 lb Fryer
  • 1 tsp Oregano Salt & pepper to taste
  • 1 c. Water Juice of 2 lemons
  • 1 x Garlic clove -- - chopped
  • 1/2 x Block butter
  • 2 Tbsp. Extra virgin olive oil

Direcciones

  1. Rub chicken w/juice of 1 lemon, salt & pepper. Mix remaining lemon juice w/oregano, garlic, & additional salt & pepper, & rub cavity of chicken.
  2. Place in pan w/butter & water, and brush w/oil Bake in oven 450F. till golden; lower heat to 350F. Bake for 30 minutes, basting and turning frequently. Variation: Omit butter. Season chicken as directed above. Place in roasting pan w/1c. water. Mix together 1/2c. extra virgin olive oil & 2T. tomato paste; pour over chicken and bake.
