Receta Chicken Salad on Crossiants
This is my favorite Chicken Salad Recipe. I usually serve this chicken salad on croissants or on a bed of lettuce. It is also delicious served with celery sticks. To make things easier, I make this salad with a Rotisserie Chicken. When purchasing a Rotisserie Chicken for this salad, buy either the Lemon-pepper Chicken or the Plain Rotisserie Chicken. I have found that the BBQ style Rotisserie Chicken doesn't work well in this recipe. Enjoy!
- Chicken Salad~
- 2-1/2 cups cubed cooked chicken
- 2/3 cup dried cherries, chopped
- 1/3 cup chopped celery
- 1/2 cup grapes, cut in half
- 1 green onion, thinly sliced
- 1/3 cup chopped pecans, toasted
- 4 T olive oil mayonnaise or mayo to taste
- salt and pepper to taste
- 6 croissants
In a large bowl, add all ingredients in order given. Stir together and Serve on Sliced Croissants.
