With the temperatures soaring and the heat index even higher, I’m sure you’re not wanting to step outside to grill up chicken breasts. Heck, I don’t even want to heat up my kitchen by turning on the stove or oven! So I came up with a dinner salad – Chicken Salad with Blueberries, Cherries & Apricots – that’s a satisfying weeknight meal that requires no cooking. It takes under 20 minutes to make, is easy to prepare, and uses seasonal fruits and vegetables, too.

Instead of grilling or baking the chicken breast in this recipe, I avoided cooking by using cans of HORMEL® Premium Chicken Breast in this dinner salad recipe. In my opinion, the chunks of chicken breast meat that come out of HORMEL’s cans tasting just as fresh as the rotisserie chicken you get at the store. Since the chicken is packed in water, it’s moist and tender. Best of all, the cans are sitting in your pantry waiting to be turned into anything from soups and casseroles to sandwiches. How convenient!

Chicken Salad with Blueberries, Cherries & Apricots uses some of my favorite summertime fruits such as apricots and cherries. You can try a different combination if you wish depending on the season and what’s on sale at your grocery store. Another delicious combination that would go well with HORMEL® Premium Chicken Breast could be strawberries, raspberries and peaches.

Use your favorite baby lettuce mix, too. I chose spring lettuce, baby kale, and a little arugula. Baby spinach or chopped romaine would also work well. For dressings, I tried Green Goddess and my husband, Paul ate his with Catalina. (We love our classic ‘70s salad dressings!) However, I decided the Chicken Salad with Blueberries, Cherries & Apricots is delicious enough on its own.

Finally, leftover Chicken Salad with Blueberries, Cherries & Apricots can be rolled into sandwich wraps or pita pockets the next day for lunch. (I made sure that the recipe below gives you plenty of leftovers for lunch!) Add a little salad dressing or mayo, if you like.

Directions

Place lettuce greens in a large bowl. Put remaining ingredients (except for salad dressing) in bowl and gently toss.

Serve with salad dressing, if desired.
