Chicken Sausage Jambalaya

Ingredientes

  • 1 (6 lb.) hen, cut for frying
  • 2 lbs. smoked sausage
  • 1 tbsp. salt
  • 1/2 tbsp. black pepper
  • 1/2 tbsp. red pepper
  • 1 c. oil
  • 1 lg. onion, chopped
  • 3 garlic cloves, chopped
  • 3 quarts. water
  • 1 bunch green onions, minced
  • Parsley, minced
  • 6 c. short grain rice

Direcciones

  1. Season chicken with salt and pepper. In a large, black iron pot, brown chicken in oil. Add in onions and garlic; cook till onions are clear. Remove chicken, onions, and garlic from pot. Add in sliced sausage to oil and brown quickly. Remove sausage and excess oil from pot.
  2. Add in chicken, onions, garlic, sausage, and water to pot; cover pot and cook till chicken is tender, skimming excess fat from water. (Be sure there are at least 12 c. of stock in the pot.) Add in onion tops, parsley, and rice; bring to rapid boil. Stir and taste for seasoning. Lower heat; cover and cook for 30 to 45 min or possibly till rice is cooked and stock absorbed.
