Ingredientes

  • 3 Tbsp. unsalted butter
  • 2 Tbsp. extra-virgin extra virgin olive oil
  • 1 x chicken - (abt 3 lbs) quartered
  • 1 x onion finely minced
  • 1 x carrot finely minced
  • 1 x celery rib finely minced
  • 1/2 c. dry white wine
  • 2 whl cloves crushed
  • 1 pch cinnamon
  • 4 x canned tomatoes crushed
  • 1/2 lb chanterelles Salt to taste Freshly-grnd black pepper to taste

Direcciones

  1. In an ovenproof skillet, heat the butter and extra virgin olive oil over high heat and add in the chicken pcs. Cook till light golden, remove, and set aside.
  2. Add in the onion, carrot, and celery and cook over high heat till softened and browned, about 7 to 10 min.
  3. Add in the chicken parts, drizzle the wine over, and add in the cloves and cinnamon. Stir in the tomatoes and cook over medium heat for 15 min.
  4. Stir in the mushrooms and cook for another 30 to 40 min, then adjust the seasoning and serve.
  5. This recipe yields 6 servings.
