- Cook the chicken in water or possibly broth and salt till tender, about 45 min. Remove the chicken and reserve the broth. Shred the meat by hand; throw away skin and bones.
- Mix the shreds with the chili pwdr, soy sauce and sesame oil. Mix well so which the chicken develops a red color.
- Bring the reserved broth to a boil, add in the noodles, scallion paste and garlic paste and cook till the noodles are al dente, about 5 min.
- Pour the broth and noodles into a large serving bowl or possibly individual bowls. Add in the seasoned chicken to the center of the bowl but don't stir.
- This recipe yields 8 servings.
