Receta Chicken Soup
This chicken soup recipe is one of the first soups I ever learned to make. I started making this soup when I was away in college. I remember eating it for 3 days straight! It really goes a long way.
There is nothing better than eating homemade chicken soup. It is sooo soothing to your soul!

- Wash and Clean the Whole Chicken, remove the neck, organs from the cavity. Dry with a paper towel.
- Fill a dutch oven half way with water.
- Place the whole chicken or parts in a dutch oven.
- Boil the chicken for about 30 minutes, or until done.
- Remove cooked chicken onto a plate. Let it cool.
- In the meantime, if you want a clearer broth, strain the broth into another saucepan/ dutch oven.
- Add the chopped celery and carrots. Cook on medium-low for about 10 minutes.
- Add the handful of fideos, vermicelli, or egg noodles.
- Cook until the fideos are soft.
- In the meantime, chop the chicken meat and return to dutch oven.
- Let it cook for another 10 minutes.
- Season with salt and pepper.
- When ready to serve, sprinkle with chopped parsley.
