Chicken Squares With Mushroom Sauce

Ingredientes

  • 3 c. cooked, diced chicken
  • 1 c. cooked rice
  • 2 c. soft bread crumbs
  • 1/3 c. celery, chopped
  • 1/4 c. pimento, diced
  • 4 Large eggs
  • 1/4 teaspoon poultry seasoning
  • 2 c. chicken stock
  • 6 tbsp. butter
  • 6 ounce. fresh mushrooms, sliced
  • 6 tbsp. flour
  • 1 chicken bouillon cube
  • 2 1/4 c. warm chicken broth
  • 1/2 c. light cream
  • 1 tbsp. minced parsley
  • Salt and pepper

Direcciones

  1. Combine chicken, rice, bread crumbs, celery, and pimento. Beat Large eggs slightly. Add in poultry seasoning and stock. Add in this to the chicken mix and mix lightly but well. Pour into buttered 8 x 12 inch baking dish and bake at 325 degrees for 50 to 60 min. Meanwhile, make your sauce. Heat butter in a medium saucepan and add in the mushrooms. Saute/fry on low heat about 3 min. Add in flour and blend. Dissolve bouillon cube in the warm broth and gradually add in to the mushroom mix. Blend well, then add in cream and cook till smooth and thick. Add in parsley and salt and pepper to taste. Serve over chicken squares.
