Ingredientes

  • 4 lrg dry mushrooms
  • 2 lb chicken - (8 pieces thighs, legs, breast) loose skin and fat discarded
  • 2 tsp corn oil
  • 1 piece fresh ginger - (1" long) minced very fine
  • 4 x garlic cloves minced fine
  • 2 med onions coarsely minced
  • 1 c. water
  • 1/4 c. soy sauce
  • 1/2 tsp sugar
  • 2 x carrots sliced diagonally into 1" pcs - (2 c.)
  • 2 med potatoes peeled, and cut into 1" cubes
  • 4 x scallions cut into 2" lengths
  • 1 tsp Korean sesame oil

Direcciones

  1. Cover the mushrooms completely with water and let them soak for 2 hrs. Drain, cut them into halves and throw away the stems.
  2. Put the chicken into a pan without oil and stir-fry over moderate heat for 2 min. Add in the corn oil and ginger and fry for 1 minute. Add in the garlic and onions and stir-fry for another minute, stirring all the while.
  3. Add in the water, soy sauce, sugar, carrots, potatoes, mushrooms and scallions, cover the pan and cook over low heat for 25 min. Stir now and then.
  4. At the last moment, when the chicken will have become tender, add in the sesame oil and cook for 5 min more. There is little sauce remaining but everything is moist and tender.
  5. Serve hot with sticky rice and 3 or possibly 4 side dishes of your choice.
  6. This recipe yields 4 servings.
