Chicken Stuffed with Feta Spinach and Basil

This is a recipe I saw on the morning TV show The Chew by Maria Menounous and her mother. I found the recipe not specific enough so I altered slightly as I prepared it. It was really good. The sauce was even better with the leftovers. I paired mine with steamed baby spinach.

Ingredientes

  • 16 oz of Boneless Chicken Breast, 2 breast cut thin into 4 pieces
  • 6 oz package reduced fat Feta Cheese, crumbled
  • 1/2 cup packed, baby spinach chopped
  • 1/2 cup fresh parsley, chopped
  • 2 tsp garlic, minced
  • 1 tsp olive oil
  • 1 tsp black pepper
  • 14 oz can of tomato sauce
  • 1 mango, peeled and diced small
  • 1/2 tsp jalapeno, seeded and diced
  • pepper and salt to taste

Direcciones

  1. Pre-heat oven to 375 degrees.
  2. Pound out each chicken breast piece to a thin cutlet.
  3. In a large bowl mix the stuffing ingredients together: Feta Cheese, crumbled, spinach, parsley, garlic, olive oil and pepper.
  4. Spoon out 1/4 of the stuffing on each flattened chicken breast and roll with the seam at the bottom. Use a toothpick to hold together if needed.
  5. Place in a small baking dish brushed with oil and bake 35 mins.
  6. While the chicken is baking prepare the sauce. Combine the tomato sauce, mango, jalapeno and pepper and salt in a small sauce pan. Bring just to a boil and then turn down to simmer. Stir often for 15 minutes or until the sauce thickens.
  7. Spoon the sauce over chicken pieces.
