Ingredientes

  • 1 pound skinned, boned chicken breast, cut into bite sized pcs
  • 1 teaspoon oil
  • 13 ounce. chicken broth
  • 8 ounce. tomato soup
  • 1 pkg. taco seasoning mix
  • 12 ounce. corn
  • 1 med. green pepper, minced
  • 1 1/2 c. dry instant rice
  • 1/2 c. shredded cheddar cheese
  • Tortilla chips

Direcciones

  1. Saute/fry chicken in oil about 2 min. Add in broth, tomato sauce and taco seasoning mix. Bring to a boil, then simmer 5 min, covered, stirring occasionally. Add in corn and peppers. Bring to a full boil. Stir in rice. Cover; remove from heat. Let stand 5 min. Fluff with fork. Serve over or possibly alongside tortilla chips; top with cheese. Serves 4.
  2. VARIATIONS: Substitute turkey or possibly tofu for chicken; substitute 1 1/2 c. cooked brown rice for broth and rice.
