%20.%20.%20.%20I%20invented%20my%20own%20version%20of%20it.%20I%20had%20to%20make%20a%20few%20adaptions%20to%20the%20ingredients%20I%20had%20on%20hand,%20but%20I%20think%20I%20did%20that%20quite%20successfully.%20You%20be%20the%20judge%20of%20that!%3C/p%3E%3Cp%3EI%20didn't%20have%20any%20tortilla%20chips,%20but%20I%20did%20have%20a%20package%20of%20soft%20corn%20tortillas%20and%20so%20I%20made%20my%20own.%20Which%20are%20actually%20much,%20MUCH%20better%20than%20store%20bought%20tortilla%20chips.%20YOU%20get%20to%20control%20the%20amount%20of%20spice%20and%20flavour%20.%20.%20.%20and%20they%20are%20baked,%20not%20fried.%20So%20easy%20to%20do.%20I%20love%20em!%3C/p%3E%3Cp%3EThe%20only%20chicken%20I%20had%20available%20was%20some%20frozen%20battered%20chicken%20strips%20.%20.%20.%20not%20totally%20healthy,%20but%20in%20small%20quanities,%20ok.%20These%20were%20actually%20chicken%20tenders%20.%20.%20.%20not%20chewed%20up%20chicken.%20I%20shook%20them%20(frozen)%20in%20a%20bag%20with%20some%20Tacon%20seasoning%20and%20baked%20them.%20VOILA!%20Southwestersn%20chicken%20strips.%20Cut%20in%20half%20diagonally,%20they%20were%20fab%20in%20this%20salad.%3C/p%3E%3Cp%3EThe%20real%20star%20though%20is%20the%20dressing.%20It's%20cool%20and%20creamy%20and%20very%20low%20in%20fat,%20which%20is%20an%20extra%20bonus!%20I%20used%20no%20fat%20mayo%20and%20sour%20cream%20for%20mine%20and%20it%20turned%20out%20just%20wonderfully%20delicious%20with%20just%20a%20bit%20of%20heat.%20You%20can%20control%20that%20by%20using%20more%20or%20less%20of%20the%20Chipolte%20chili%20paste.%20(This%20gives%20it%20a%20nice%20smokey%20flavour%20too.)%20I%20used%20mild%20salsa,%20as%20that%20is%20what%20I%20had.%3C/p%3E%3Cp%3EIf%20you%20don't%20have%20a%20stock%20pot,%20don't%20sweat%20it.%20You%20can%20just%20use%20some%20stock%20powder.%20You%20can%20of%20course%20make%20it%20even%20lower%20in%20fat%20by%20using%20plain%20skinless%20boneless%20chicken%20breast%20meat,%20cut%20into%20strips%20and%20then%20tossed%20with%20the%20taco%20seasoning%20mix.%20I%20had%20to%20use%20what%20I%20had%20to%20use%20.%20.%20.%3C/p%3E%3Cp%3EWith%20low%20fat%20cheese,%20and%20baked%20tortilla%20chips,%20lots%20of%20veggies,%20a%20bit%20of%20low%20fat%20cheese,%20and%20a%20very%20tasty%20low%20fat%20dressing,%20I%20think%20this%20is%20quite%20a%20healthy%20salad%20meal%20.%20.%20.%20Todd%20.%20.%20.%20well,%20he's%20not%20a%20salad%20person%20per%20se.%20He%20had%20a%20steak%20pie.%20Men!%3C/p%3E%3Cp%3E*Chicken%20Taco%20Salad*%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EThe%20dressing%20is%20the%20real%20star%20here.%20You%20can%20make%20it%20as%20spicy%20or%20not%20as%20you%20desire.%20It's%20easy%20to%20keep%20this%20low%20fat%20as%20well%20if%20you%20stick%20to%20low%20fat%20ingredients!%3C/p%3E%3Cp%3EFor%20the%20Salad:%3C/p%3E%3Cp%3EFirst%20make%20the%20dressing.%20Put%20the%20sour%20cream%20into%20a%20bowl%20along%20with%20the%20vegetable%20stock%20pot%20and%20mayonnaise.%20Mash%20and%20mix%20well%20together%20with%20a%20fork,%20until%20the%20stock%20pot%20is%20completely%20dissolved.%20Stir%20in%20the%20salsa,%20lime%20juice%20and%20zest,%20chipolte%20chili%20paste%20to%20taste,%20garlic%20and%20fresh%20coriander.%20Taste%20and%20adjust%20seasoning%20as%20desired%20with%20fine%20seasalt%20and%20freshly%20ground%20black%20pepper%20to%20taste.%20Cover%20and%20chill%20until%20you%20are%20ready%20to%20use.%3C/p%3E%3Cp%3EShake%20the%20frozen%20chicken%20strips%20together%20with%20half%20of%20the%20taco%20seasoning%20mix.%20Place%20on%20a%20baking%20tray%20and%20bake%20according%20to%20the%20package%20directions.%20Remove%20from%20the%20oven%20and%20let%20cool%20to%20room%20temperature%20if%20desired.%20Cut%20in%20half%20on%20a%20diagonal.%3C/p%3E%3Cp%3EDivide%20the%20lettuce%20amongst%204%20chilled%20salad%20plates.%20Divide%20the%20olives,%20drained%20corn,%20spring%20onions,%20sliced%20tomatoes%20and%20grated%20cheese%20amongst%20the%20four%20plates,%20scattering%20all%20on%20top%20of%20the%20lettuce.%20Scatter%20the%20chicken%20pieces%20over%20top.%20Sprinkle%20with%20the%20crushed%20tortilla%20chips.%20Serve%20and%20pass%20the%20dressing%20at%20the%20table.%3C/p%3E%3Cp%3ENote:%20You%20may%20serve%20this%20with%20additional%20tortilla%20chips%20if%20desired.%3C/p%3E%3Cp%3ETo%20make%20your%20own%20low%20fat%20tortilla%20chips.%20Cut%20several%20corn%20tortillas%20into%20wedges.%20Place%20on%20a%20baking%20tray.%20Spritz%20with%20low%20fat%20cooking%20spray.%20Sprinkle%20the%20tops%20with%20some%20ground%20coriander,%20ground%20cumin,%20garlic%20powder,%20salt,%20pepper,%20mild%20chili%20powder%20and%20oregano%20flakes%20to%20taste.%20Bake%20in%20a%20190*C/375*F/%20gas%20mark%205%20oven%20until%20crispy%20and%20lightly%20browned,%20giving%20them%20a%20stir%20halfway%20through%20the%20baking%20time.%20It%20should%20take%20between%208%20and%2010%20minutes.%3C/p%3E%3Cp%3EIn%20The%20Cottage%20today,%20I'm%20baking%20a%20delicious%20Walnut-Pear%20Sour%20Cream%20Coffee%20Ca
