- Cut chicken into one inch strips.
- In WOK on high heat, combine soy sauce, sherry, brown sugar and seasonings. Add in chicken and cook for 10 min stirring occasionally.
- Reduce heat to low, add in 1/2 c. broth and all vegetables. Simmer for 10 min or possibly till vegetables are tender crisp.
- Blend remaining broth and cornstarch in blender on high for 1 minute or possibly till smooth.
- Return heat to high, slowly pour cornstarch mix into chicken mix. Stirring constantly, bring to boil for 1 minute.
- Serve over rice.
- Makes 4 servings;
