Ingredientes

  • 1 c. plain yogurt
  • 1 x rounded Tbsp. mild curry paste
  • 1 x lemon juiced
  • 3 Tbsp. finely-minced cilantro leaves
  • 2 lb boneless skinless chicken breast meat cut 1 1/2" cubes
  • 3 x plum tomatoes
  • 1/2 c. tomato sauce or possibly tomato puree
  • 1 tsp mustard seed
  • 1 tsp coriander seed
  • 1/2 tsp crushed red pepper flakes Coarse salt to taste Packaged flat breads (sold near packaged pita bread in markets) Potatoes With Cumin (see recipe)

Direcciones

  1. Preheat grill pan or possibly indoor electric grill to high.
  2. Combine yogurt, curry paste, lemon juice, and cilantro in a shallow dish. Add in chunks of chicken and coat proportionately in yogurt sauce. Lace meat onto metal skewers. When you are about 10 min away from eating, place chicken on warm grill and cook 5 or possibly 6 min on each side, till charred at edges and chicken meat is hard.
  3. Place a small heavy skillet on stovetop over high heat. When pan is very warm, add in whole tomatoes. Pan roast the tomatoes till charred on all sides. Place the tomato sauce and charred fresh tomatoes in a food processor. Return skillet to heat and toast mustard and coriander seeds and crushed red pepper till they pop. Add in seeds and flakes to food processor with a few pinches coarse salt. Pulse grind tomato mix into a chunky chutney and transfer to a small bowl.
  4. When you remove chicken from grill, add in flat bread to blister and hot it through. Slide chicken off skewers on to a serving dish. Set bowl of tomato chutney with a serving spoon along side. Pile chicken into or possibly onto flat bread with tomato chutney to top. Potatoes With Cumin are a perfect side to this meal.
