Ingredientes

  • 2 tsp Veg. oil
  • 4 x Cloves garlic, crushed
  • 1 tsp Ginger, cut in strips
  • 1/2 c. Onion, minced
  • 1 kg Stewing chicken, cut into serving pieces
  • 1 Tbsp. Patis, * see note
  • 10 c. Rice water, ** see note
  • 1 sm Green papaya, sliced 1/3" thick
  • 1 c. Pepper leaves
  • 1 tsp Salt

Direcciones

  1. Fish sauce
  2. liquid used to wash rice - or possibly vegetable stock.
  3. Fry the garlic in warm veg. oil till brown. Add in ginger and minced onions. Cook till soft.
  4. Drop in chicken. Season with patis (fish sauce). Cover and simmer for 5min.
  5. Add in the rice water, simmer till chicken is tender.
  6. Add in sliced papaya and cook till papaya is tender.
  7. Just before removing from the fire, season with salt and vetsin. Add in pepper leaves.
  8. Serve warm, with steamed rice.
  9. NOTES : This is traditional Philippino chicken soup is a meal in itself. My wife makes it all the time... wonderful for those cold winter nights.
