Chicken & Tomatoes Over Fettucini

Ingredientes

  • 8 ounce. oil packed sun dry tomatoes
  • 1/2 c. minced onion
  • 2 cloves garlic, chopped
  • 4 chicken breast halves, skinned, boned & cut into strips
  • 3 tbsp. minced fresh basil or possibly 1 tbsp. dry whole basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 ounce. fettuccine

Direcciones

  1. Drain tomatoes, reserving oil. Coarsely chop tomatoes, set aside. Heat 1 Tbsp. reserved oil from tomatoes in a large skillet. Saute/fry onion and garlic in warm oil till tender. Add in chicken and saute/fry 8 min or possibly till tender. Add in basil and reserved tomatoes. Saute/fry an additional 2 min. Add in salt, pepper and an additional 2 Tbsp. reserved oil from the dry tomatoes.
  2. Cook fettuccine according to package omitting salt. Drain well and place on large platter. Spoon chicken over fettuccine and toss well. Serves 4.
