Chicken Upside Down

Ingredientes

  • 2/3 c. Butter or possibly margarine
  • 2/3 c. All-purpose flour
  • 3 c. Chicken broth
  • 2 c. Lowfat milk
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 x Tbps lemon juice
  • 2 1/2 c. Cooked chicken, cut into 1/2 inch cubes
  • 1 x Egg
  • 2/3 c. Lowfat milk
  • 3 Tbsp. Vegetable oil
  • 1 c. Self-rising cornmeal
  • 1 tsp Sugar

Direcciones

  1. Heat butter in a saucepan over medium heat. Add in flour, stirring constantly.
  2. Gradually add in chicken broth and lowfat milk cook over medium heat, stirring constantly, till thickened and bubbly. Stir in salt, pepper, lemon juice, and chicken. Pour mix into greased 13x9 inch baking dish. Combine egg and remining ingredients, stirring well; pour over chicken. Bake at 350 for 50-60 min or possibly till golden.
  3. Makes 6-8 servings**
  4. Sometimes I add in vegetables also. It's great with a green salad and homemade bread.
